Vegan Eggnog!🤍🎄 Or “Vegnog”! 🌱😉 Now that it’s December and eggnog is in all grocery stores, I give myself permission to share this ultra creamy and lush homemade version. It’s naturally sweetened, and lightly spiced with cinnamon and nutmeg. Serve it chilled or warm for an eggnog latte. Just 8 ingredients and all you need is a blender. Happy Sipping!😘✌️

Vegan Eggnog:
1/2 cup almonds
1/4 cup raw cashews
1/4 cup coconut flakes
3 cups water
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp sea salt
2 medjool dates, pits removed
splash bourbon or cognac (optional)

1. Soak the almonds, raw cashews and coconut flakes in a small bowl with boiling water for 1-2 hours. Alternatively you can soak the ingredients overnight. Drain
2. Add the soaked almonds, cashews and coconut flakes to the blender with water, cinnamon, nutmeg, sea salt and dates. Blend on high for 1 minute.
3. Pour mixture into a nut milk bag and squeeze to strain the milk. (Alternatively you can use a thin tea towel, old t-shirt or pair of tights). Continue to squeeze, moving your hands around the bag to allow new areas to be milked.
4. Pour the freshly squeezed eggnog from your bowl back into your blender (this allows for easy transfer into a bottle). Pour into an air tight bottle and store in the fridge. Serve chilled, or warm for a latte style drink. Optional to add a splash of dark liquor (bourbon, brandy or cognac) for a spiked version.
