1 cup shredded red cabbage
1 cup shredded white cabbage
1 cup grated green apple (or gala)
1 cup grated carrot
1/3 cup coconut yogurt (or other plant-based yogurt)
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons maple syrup
Pinch sea salt
¼ cup pumpkin seeds
4 Lightlife Plant-Based Burgers
4 burger buns
4 tablespoons Dijon mustard
1. In a large mixing bowl combine the red cabbage, white cabbage, apple, and carrot. In a separate smaller mixing bowl, whisk together the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup and pinch of sea salt.
2. Pour the dressing over the coleslaw and toss to combine. Let sit.
3. Toast pumpkin seeds in a small skillet on medium heat until golden (about 7 mins). Sprinkle over coleslaw.
4. In a large skillet add the Lightlife Plant-Based burgers. Cook each side until golden and browned (about 4 mins per side). Slather mustard onto the burger buns, add the patty and top with apple coleslaw. Serve burgers with remaining apple coleslaw on the side.
