Here’s a Thanksgiving Side Dish: Easy Apple Slaw!🧡🌱 It’s crispy and tangy. Made with apples, cabbage, creamy cider vinegar dressing, and toasted pumpkin seeds. This is a great side dish to serve with warm root vegetables. Us Canadians have already celebrated our Thanksgiving (in October), but I’m thinking of my fellow friends in the U.S.A! 1 cup red cabbage shredded
1 cup white cabbage shredded
1 cup apple grated (I like Gala or Granny Smith)
1 cup carrot grated
1/4 cup flat leaf parsley leaves tightly packed, finely chopped
1/3 cup coconut yogurt
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
2 tsp maple syrup
pinch sea salt
¼ cup pumpkin seeds
1. In a large mixing bowl combine the red cabbage, white cabbage, apple, carrot and parsley. In a separate smaller mixing bowl, whisk together the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup and pinch of sea salt. Pour the dressing over the coleslaw and toss to combine. Let sit.
2. Toast pumpkin seeds in a small skillet on medium heat until golden (about 7 mins). Sprinkle over coleslaw.
